This coffee is produced by selected farms in Popayan region. Coffee is brought from growers in dry parchment, it is later milled at Popayan and transported to Caldas to be decaffeinated. Sugarcane decaffeination employs ethyl acetate (EA), a naturally-occurring compound, to remove caffeine from coffee beans. This EA is derived from molasses, a byproduct of sugar production, making the process qualify as "naturally decaffeinated." The EA process follows a straightforward procedure. Firstly, the coffee beans are moistened with water, and then EA is circulated throughout. During this step, the EA binds with the caffeine present in the beans, effectively extracting it while largely preserving the other flavour compounds. Once the desired level of caffeine reduction is achieved, the EA residue on the beans is washed away with fresh water.
